I made it one month as a Florida resident before experiencing my first tropical storm; and it is only fitting that the storms name was Elsa. Due to weather, my husband and I spent most of our day inside, so we decided to start something new. Every week (hopefully!) we are going to make a recipe from different vacation destinations around the world!
Seeing our love for Disney, it only seemed natural that we start there! When we go to Epcot, we are those people who always start to the right (or to the left when we get off the skyliner) ((Mexico is my favorite so I love saving it for last)) Canada is where we draw our inspiration for our first, "Vacation in Your Kitchen" recipe. For this first edition we made Canadian Cheddar Cheese Soup from Le Cellier Steakhouse in the Canadian Pavilion at Epcot.

Yes I didn't really think through making a soup in the middle of a Florida summer, but let me tell you, my husband and I had very little leftovers once we were through with this recipe (and we made the recipe according to the serving size, which is 10, which says a lot!) It is very rich and super tasty considering how simple the soup appears when you just look at it. We had all these ingredients in some form from our local Aldi. In my opinion, the star ingredients are the grated white cheddar cheese and the fresh chopped chives. We used Wisconsin white cheddar cheese and this made all the difference! The fresh chives as a garnish also gave the soup a nice crunch for some added texture at the end.

We do not have an immersion hand blender, so we just put everything into our Ninja blender and blended it that way. I'm sure this made our soup more liquidy (if that's a word) than that hand immersion blender would have, but we enjoyed it nonetheless. Other than that, this recipe was super easy to follow!
We ate this as our main dish, but I can see it accompanying well with a panini of some sort or an appetizer to a nice steak (as per Le Cellier Steakhouse). My husband rated this recipe a 4/5 stars and said that he would love to have this again during football season! Go Jags!
