Vacation In Your Kitchen #3-Cheese Soufflé from Beauty and the Beast

I've been a Floridian for roughly 3 months and this past weekend, my husband and I discovered one of the hidden jems in our town-Jax Cooking Studio. Jax CS offers cooking lessons that follow different themes throughout the week. For my birthday, my husband signed us up for the Beauty and the Beast themed class. Us along with 7 little girls dressed up as Belle (and their moms) learned how to make 4 recipes inspired by the film.
During our class, we made pizza roses, cheese soufflé, meat pie, and the grey stuff. We've had the grey stuff from Be Our Guest in Magic Kingdom on the day we got engaged and honestly, you can't touch that experience for us because it is SOOOOOO DELICIOUS. So with that off the board, the one recipe that I was most surprised by was the Cheese Soufflé. Made with minimal ingredients, this recipe is a fun way to fancy up breakfast.

We halved this recipe and it still made enough for two ramekins worth of soufflé, which was perfect for my husband and I. As you all know I usually get all of my ingredients from Aldi, and although the ingredients were already there for me, this does look like a very Aldi friendly recipe.
This recipe did not require any fancy equipment-just a ramekin, a pot, and a bowl. Don't let the lack of equipment fool you, you definitely need to be a beast to whip those egg whites into firm peaks. What we learned during this process, tuck the bowl into your elbow and whisk in large circular formations to allow the air to whip up the egg whites.
This was served as the second of the four recipes we made. We ate this after the pizza roses and before the meat pie. We plan to make this recipe again for Thanksgiving breakfast as it is a perfect portion and protein content when you know you'll be having a larger meal later in the day, I plan to add chives and bacon to our soufflés when we make them again and maybe toss in some Wisconsin cheddar to the cheese blend. Overall, this was an easy recipe to make and was a fun way to fancify breakfast.
